Last Monday night I made my way into the City to attend an “inspirational” talk by Sarah Britton of  the beautiful My New Roots blog. To be perfectly honest I was in two minds about the whole thing. It was at the end of a very busy holiday weekend. I was tired and the talk didn’t start until 8pm, but I’d already bought the ticket online so I dragged myself into the car and off I went. Yes, I was in need of an inspirational talk – and yes, I certainly got one.

Sarah has just written her second cookbook Naturally Nourished and it’s a total beauty.  She was delightful, so full of energy and enthusiasm all wrapped with a wonderful sense of humor. It was a fabulous evening and I left feeling, funnily enough, very understood!  When you find your tribe you know it immediately, there’s no effort at small talk, someone says something and you know exactly what they’re talking about and how they’re feeling. Everything feels aligned. The book is a glorious catalog of vegetarian recipes, I’m not a vegetarian anymore but I’m more than happy to step back into that role when cooking from this book. Just about everyone could do with eating more vegetables anyway – at least everyone I know.

The hummus bowl was my lunch today and it was a delight. Fresh organic veggies, gently tossed with apple cider vinegar with a deliciously creamy hummus. Never mind meatless Mondays, I’m going for meatless Monday, Tuesday and Wednesdays 🙂

Hummus Bowl, An Inspiration from Sarah Britton

Serves: 1 large lunch
Ingredients
  • 1 cup best quality hummus
  • 1 carrot, peeled and sliced
  • 1/2 red pepper, sliced
  • A few good quality lettuce leaves
  • 4 pitted olives
  • 1/4 avocado
  • A handful of chickpeas
  • 1 teaspoon apple cider vinegar
  • A grinding of fresh black pepper
  • A dusting of harissa spice (very optional)
Instructions
  1. Arrange the vegetables and hummus in a shallow bowl
  2. Drizzle over the apple cider vinegar
  3. Sprinkle over the black pepper and harissa spice
  4. Enjoy.
