Place the cashews in a bowl and cover with boiling water. Soak for 15 minutes, then drain and rinse well.
Meanwhile, add the frozen berries, orange zest, orange juice, cinnamon and sea salt to a saucepan. Bring to a gentle simmer, cover and cook for about 5–8 minutes until the berries have softened.
Transfer the warm berry mixture to a high-speed blender along with the soaked cashews, vanilla and almond extract (if using). Blend until completely smooth and velvety.
Pour the mixture into a bowl or large measuring jug. Whisk in the chia seeds until evenly distributed.
Refrigerate for at least 2 hours, whisking again after 15 minutes to prevent the chia seeds from settling.
Serve chilled with your favorite toppings.
