Beautiful Berry Chia Pudding!

A delectable “creamy” chia pudding treat.

Ingredients

  • 4 cups frozen mixed berries
  • Zest and juice of 1 large orange
  • ¼ teaspoon ground cinnamon
  • 2 teaspoons pure vanilla extract
  • ¼ teaspoon almond extract (optional)
  • ½ cup raw unsalted cashews
  • 6 tablespoons chia seeds
  • ⅛ teaspoon fine sea salt
  • Optional Toppings

    • Fresh berries
    • Toasted pistachios
    • Homemade granola
    • Hemp hearts
    • Mint or lemon balm
    • Coconut yogurt

Instructions

  • Place the cashews in a bowl and cover with boiling water. Soak for 15 minutes, then drain and rinse well.
  • Meanwhile, add the frozen berries, orange zest, orange juice, cinnamon and sea salt to a saucepan. Bring to a gentle simmer, cover and cook for about 5–8 minutes until the berries have softened.
  • Transfer the warm berry mixture to a high-speed blender along with the soaked cashews, vanilla and almond extract (if using). Blend until completely smooth and velvety.
  • Pour the mixture into a bowl or large measuring jug. Whisk in the chia seeds until evenly distributed.
  • Refrigerate for at least 2 hours, whisking again after 15 minutes to prevent the chia seeds from settling.
