These Blueberry Banana Overnight Oats are creamy, naturally sweet, and filled with juicy blueberries, ripe bananas, hearty oats, and chia seeds. They’re made the night before, so breakfast is waiting for you when you wake up—no cooking required

Ingredients

  • ½ cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 ripe banana, mashed
  • ½ cup fresh or frozen blueberries, plus extra for serving
  • ¾ cup unsweetened milk (soy, oat, or almond all work well) or dairy if you prefer
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • 1 teaspoon maple syrup (optional, depending on the sweetness of your banana)
  • 2 tablespoons chopped walnuts (optional)
  • For Serving

    • Fresh blueberries
    • Sliced banana
    • Chopped walnuts
    • Hemp hearts or chia seeds
    • Fresh mint or lemon balm leaves
    • A drizzle of maple syrup or date syrup, if desired

Instructions

  1. In a bowl or wide-mouth mason jar, combine the rolled oats and chia seeds.
  2. Add the mashed banana, blueberries, plant milk, vanilla, cinnamon, maple syrup (if using), and chopped walnuts. Stir well until everything is evenly combined.
  3. Cover and refrigerate overnight, or for at least 6 hours, allowing the oats and chia seeds to absorb the liquid and become thick and creamy.
  4. In the morning, give the oats a good stir. If they’ve become thicker than you’d like, simply add a splash more plant milk until they reach your preferred consistency.
  5. Spoon into a serving bowl or enjoy straight from the jar. Top with fresh blueberries, sliced banana, chopped walnuts, hemp hearts, and a few fresh mint or lemon balm leaves for a little Plant Magic. Finish with a drizzle of maple or date syrup if you’d like a touch more sweetness.

Plant Magic Tips

  • Frozen blueberries work beautifully and create gorgeous purple swirls throughout the oats.
  • Make two or three jars at once for easy breakfasts throughout the week. They’re best enjoyed within 2–3 days.
  • For extra protein, use unsweetened soy milk and sprinkle hemp hearts over the top before serving.
  • In late summer, try swapping some of the blueberries for blackberries or raspberries, or add a handful of fresh peaches.
