Overnight Oats with Banana and Walnuts

A delicious, quick, nourishing, and very simple recipe to fuel your mornings.

Ingredients

1/2 cup old fashioned oats

3/4 cup unsweetened soy milk

1 teaspoon chia seeds

1/2 mashed banana

1/2 teaspoon ground cinnamon (optional)

12 teaspoons date or maple syrup

1/2 teaspoon vanilla extract

1 tablespoon chopped walnuts, for topping

Fresh banana chunks for topping

Instructions

  1. Simply combine all the ingredients in a bowl, and refrigerate in a Mason jar or airtight container overnight to thicken.
  2. To serve, add a few more banana chunks and crumbled walnuts as a delicious topping.
