A delicious, easy-to-make, butternut squash soup, perfect for a Fall day.
1 yellow onion, peeled and chopped
2 sticks celery, peeled and chopped
1, 48 oz packet of ready-chopped butternut squash
1 apple, peeled and cored (I used Gala)
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
2 –3 small sprigs of fresh sage
4 cups of best-quality vegetable stock
