Vegan Teriyaki Noodles

Vegan Teriyaki Noodles

A deliciously quick, easy and flavorful dish.

Ingredients

1 package rice, soba, or udon noodles

1 1/2 inch knob of fresh ginger, peeled and grated

3 cloves of garlic, peeled and minced

1/2 teaspoon red pepper flakes

1/3 cup low sodium Tamari

1/4 cup date OR maple syrup

1/4 cup rice vinegar

1 1/2 tablespoons cornstarch

1/3 cup filtered water

 

Instructions

  1. Cook the noodles according to the package instructions.
  2. Combine the grated ginger, minced garlic, low sodium Tamari, date or maple syrup, and rice vinegar in a pan, bring to the boil, turn down to a simmer and allow to cook for 2-3 minutes.
  3. Place the cornstarch in a small bowl, add the water and stir well until you have a smooth paste. Pour into the sauce and stir well, allow it to simmer for 2-3 minutes, stirring constantly, it will thicken nicely.
  4. Pour the teriyaki sauce over the cooked noodles and serve.
  5. Steamed broccoli, carrots, peppers, and spring onions are lovely accompaniments.
