Baked Peaches with Lavender pin

A delicious and very simple summery dessert

Ingredients

Scale

4 peaches, halved with skin on

1 cup white or rosé wine

1 cup of water

1 tablespoon of honey, or maple syrup

4 sprigs of culinary lavender

Zest of a lemon

Juice of 1/2 a lemon

Instructions

  1. Pre-heat the oven to 400F
  2. Half the peaches, discard the pits, keep the skin on. Place the halved peaches in an oven-proof dish.
  3. Mix the wine, water, honey (or maple syrup if substituting), and lemon juice. Pour the wine mixture over the peaches. Scatter the lavender and lemon zest on top.
  4. Place in the oven and bake for 20 minutes.
  5. Remove from the oven, baste, then bake for a further 10-20 minutes until the fruit is just tender.
  6. Serve warm with ice cream, creme fraiche or cream.
