Tofu Chocolate Mousse

Ingredients


Scale

1 cup dark chocolate chips, melted

1, 16oz packet of SILKEN tofu, drained of liquid

1/2 cup good quality cocoa powder

1/31/2 cup maple syrup Start with 1/3 cup and add more if desired.

1 teaspoon vanilla extract

1/4 teaspoon rose water. Optional, but lovely. 

Pinch of salt


Instructions

1. Drain the silken tofu in a fine-toothed sieve. Press excess liquid out. Place in a vitamix  along with the cocoa powder, maple syrup, vanilla extract and rose water if using. Blitz until smooth.

2. Gently melt the chocolate chips in a heatproof bowl in the microwave. Be mindful not to burn the chocolate. You want it JUST melted, stir well.  Pour into the vitamix with the rest of the ingredients. Blend until combined.

3. Taste! Add more maple syrup, vanilla extract, or salt if desired.

4. Pour into individual glasses or bowls. Cover and place in the fridge until chilled—at least 4 hours.
