The topping is a little different too. Rather than classic mashed potatoes, I combine naturally sweet sweet potatoes with earthy regular potatoes for a mash that’s creamy, and flavorful. A touch of vegan butter (or regular butter if you prefer) makes it wonderfully luscious.

It also freezes beautifully. Bake, cool completely, then wrap well and freeze for up to two months. Reheat, covered, in a 350°F oven until piping hot throughout.

Ingredients
For the Sweet Potato & Celery Root Mash
- 2 large sweet potatoes, peeled and cut into chunks
- 2 medium potatoes such as Idaho or Russet, peeled and cut into chunks
- 2 tablespoons vegan butter or regular butter
- 2–3 tablespoons unsweetened soy milk
- 1 teaspoon Herbes de Provence
- Sea salt and freshly ground black pepper, to taste
For the Filling
- 2 tablespoons extra virgin olive oil
- 1 large onion, finely diced
- 2 celery stalks, diced
- 2 carrots, diced
- 8 ounces mushrooms, sliced (shiitake, cremini, or a mixture)
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 teaspoons ground cumin
- 1 teaspoon Herbes de Provence
- 2 teaspoons chopped fresh rosemary
- 1 teaspoon fresh thyme leaves
- 1 bay leaf
- Freshly ground black pepper
- 1 (15-ounce) can lentils, drained and rinsed
- 1 (14-ounce) can crushed tomatoes
- ½ cup red wine (or vegetable broth)
- ½ cup low-sodium vegetable broth, if needed
- 1 tablespoon tamari or soy sauce
- 1 tablespoon balsamic vinegar
- 1 cup frozen peas
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons chopped fresh parsley
To Finish
- Chopped parsley
- Fresh rosemary leaves
- A drizzle of extra virgin olive oil (optional)
Instructions
1. Prepare the mash
Bring a large pot of salted water to the boil. Add the sweet potatoes and regular potatoes and cook until very tender, about 20 minutes.
Drain well and return to the warm pan. Add the butter, milk, Herbes de Provence, salt, and pepper. Mash until smooth and creamy. Set aside.
2. Build the filling
Heat the olive oil in a large sauté pan or Dutch oven over medium heat.
Add the onion and cook gently for 8–10 minutes until soft and lightly golden.
Add the celery, carrots, mushrooms, and garlic. Cook for another 8 minutes, stirring occasionally, until the mushrooms have released their moisture and the vegetables begin to caramelize.
Stir in the tomato paste and cook for 2 minutes.
Add the cumin, Herbes de Provence, rosemary, thyme, bay leaf, and black pepper.
Pour in the wine and allow it to simmer for 2–3 minutes.
Add the lentils, crushed tomatoes, tamari, and vegetable broth if needed. Simmer gently for about 20 minutes until thick and rich.
Stir in the peas, balsamic vinegar, and chopped parsley.
Mix the cornstarch with the water to make a smooth slurry. Stir it into the filling and cook for another 2–3 minutes until glossy and thickened.
Remove the bay leaf.
3. Assemble
Heat the oven to 400°F (200°C).
Spoon the lentil filling into a large baking dish.
Spread the sweet potato mash evenly over the top, creating soft peaks with the back of a spoon. These little ridges become beautifully golden in the oven.
4. Bake
Bake for 25–30 minutes until bubbling around the edges and lightly golden on top.
Allow the pie to rest for 10 minutes before serving.
Finish with chopped parsley, a few rosemary leaves, and, if you like, a drizzle of extra virgin olive oil.

Refrigerate leftovers in an airtight container for up to 4 days.
Freeze for up to 2 months and thaw overnight before reheating.
