The Best Lentil Shepherd's Pie

This cozy Lentil Shepherd’s Pie is everything you want in a comforting family dinner. A rich, savory filling of lentils, mushrooms, vegetables, tomatoes, herbs, and a splash of wine is tucked beneath a cloud of buttery sweet potato and celery root mash, then baked until golden around the edges. It’s wholesome comfort food with a touch of Plant Magic.

There are few dishes that make a home feel warmer than a shepherd’s pie bubbling away in the oven.

The scent of onions slowly caramelizing in olive oil, rosemary and thyme filling the kitchen, and a creamy mash turning beautifully golden on top is enough to gather everyone around the table before you’ve even called them for dinner.

This is my Plant Magic version of the classic. Instead of traditional minced meat, hearty lentils create a wonderfully satisfying filling that’s rich with mushrooms, tomatoes, herbs, garlic, balsamic vinegar, and a splash of red wine. Every bite is deeply savory and full of comforting flavor.

The topping is a little different too. Rather than classic mashed potatoes, I combine naturally sweet sweet potatoes with earthy regular potatoes for a mash that’s creamy, and flavorful. A touch of vegan butter (or regular butter if you prefer) makes it wonderfully luscious.

Whether you’re cooking for vegetarians, vegans, or devoted meat eaters, this Lentil Shepherd’s Pie is one of those recipes that disappears quickly and earns a permanent place in your family recipe collection.

The Magic Behind the Ingredients

Lentils

Lentils are wonderfully hearty and absorb all the rich flavors of the sauce beautifully. Using canned lentils makes this recipe weeknight friendly, but cooked dried lentils work just as well.

Mushrooms

Mushrooms bring incredible savory depth and create that satisfying, comforting texture that makes this pie feel wonderfully hearty.

Olive Oil

Rather than sautéing the vegetables in broth, a little extra virgin olive oil allows the onions, carrots, celery, and mushrooms to gently caramelize, creating layers of rich flavor that form the heart of this dish.

Fresh Herbs

Rosemary and thyme add beautiful woodland fragrance, while a bay leaf quietly infuses the sauce as it simmers.

Sweet Potato & Celery Root

Sweet potato brings natural sweetness while celery root adds an earthy elegance that balances the richness of the filling perfectly.

Why This Shepherd’s Pie Tastes So Rich

The secret isn’t just one ingredient—it’s building layers of flavor.

The onions slowly soften in olive oil until sweet and golden. Tomato paste caramelizes slightly before the wine is added. Mushrooms release their deep umami richness. Fresh herbs gently perfume the sauce while balsamic vinegar adds just enough brightness to balance the tomatoes.

These simple techniques create a filling that tastes as though it’s been simmering all afternoon.

Make Ahead & Freezing

This is one of my favorite make-ahead meals.

Assemble the shepherd’s pie up to a day in advance, cover, and refrigerate until you’re ready to bake.

It also freezes beautifully. Bake, cool completely, then wrap well and freeze for up to two months. Reheat, covered, in a 350°F oven until piping hot throughout.

Plant Magic Serving Ideas

This cozy pie is delicious served with:

  • Garlicky sautéed kale
  • Steamed green beans with lemon
  • Roasted Brussels sprouts
  • A crisp green salad with a mustard vinaigrette
  • Crusty sourdough bread

Finish each serving with chopped parsley, a few tiny rosemary leaves, and a drizzle of your best extra virgin olive oil for a beautiful Plant Magic touch.

Plant Magic Tip

Don’t rush the onions.

Allowing them to slowly soften and become lightly golden creates an incredible depth of flavor that makes all the difference in the finished pie.

The most delicious comforting lentil shepherd’s pie.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

For the Sweet Potato & Celery Root Mash

  • 2 large sweet potatoes, peeled and cut into chunks
  • 2 medium potatoes such as Idaho or Russet, peeled and cut into chunks
  • 2 tablespoons vegan butter or regular butter
  • 2–3 tablespoons unsweetened soy milk
  • 1 teaspoon Herbes de Provence
  • Sea salt and freshly ground black pepper, to taste

For the Filling

  • 2 tablespoons extra virgin olive oil
  • 1 large onion, finely diced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 8 ounces mushrooms, sliced (shiitake, cremini, or a mixture)
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons ground cumin
  • 1 teaspoon Herbes de Provence
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • Freshly ground black pepper
  • 1 (15-ounce) can lentils, drained and rinsed
  • 1 (14-ounce) can crushed tomatoes
  • ½ cup red wine (or vegetable broth)
  • ½ cup low-sodium vegetable broth, if needed
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 cup frozen peas
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons chopped fresh parsley

To Finish

  • Chopped parsley
  • Fresh rosemary leaves
  • A drizzle of extra virgin olive oil (optional)

Instructions

1. Prepare the mash

Bring a large pot of salted water to the boil. Add the sweet potatoes and regular potatoes and cook until very tender, about 20 minutes.

Drain well and return to the warm pan. Add the butter, milk, Herbes de Provence, salt, and pepper. Mash until smooth and creamy. Set aside.

2. Build the filling

Heat the olive oil in a large sauté pan or Dutch oven over medium heat.

Add the onion and cook gently for 8–10 minutes until soft and lightly golden.

Add the celery, carrots, mushrooms, and garlic. Cook for another 8 minutes, stirring occasionally, until the mushrooms have released their moisture and the vegetables begin to caramelize.

Stir in the tomato paste and cook for 2 minutes.

Add the cumin, Herbes de Provence, rosemary, thyme, bay leaf, and black pepper.

Pour in the wine and allow it to simmer for 2–3 minutes.

Add the lentils, crushed tomatoes, tamari, and vegetable broth if needed. Simmer gently for about 20 minutes until thick and rich.

Stir in the peas, balsamic vinegar, and chopped parsley.

Mix the cornstarch with the water to make a smooth slurry. Stir it into the filling and cook for another 2–3 minutes until glossy and thickened.

Remove the bay leaf.

3. Assemble

Heat the oven to 400°F (200°C).

Spoon the lentil filling into a large baking dish.

Spread the sweet potato mash evenly over the top, creating soft peaks with the back of a spoon. These little ridges become beautifully golden in the oven.

4. Bake

Bake for 25–30 minutes until bubbling around the edges and lightly golden on top.

Allow the pie to rest for 10 minutes before serving.

Finish with chopped parsley, a few rosemary leaves, and, if you like, a drizzle of extra virgin olive oil.

Notes

Storage

Refrigerate leftovers in an airtight container for up to 4 days.

Freeze for up to 2 months and thaw overnight before reheating.
