Enjoy a delicious bowl of Homemade Butternut Squash Soup

There are few things more comforting than a steaming bowl of Homemade Butternut Squash Soup on a chilly autumn afternoon. Sweet roasted squash, crisp apple, fragrant herbs, and warming vegetables come together to create a soup that’s silky, nourishing, and wonderfully satisfying.

This easy Homemade Butternut Squash Soup is one of those recipes you’ll find yourself making again and again throughout soup season. Add everything to a large stockpot, let the vegetables simmer until meltingly tender, then blend until smooth and velvety. That’s it.

It’s the kind of recipe that fills the kitchen with the scent of thyme and sage, and somehow makes the whole day feel a little slower and a little kinder.

Even better? It keeps beautifully in the refrigerator and freezes like a dream, making it perfect for meal prep or those evenings when you want something wholesome without much effort.

Why You’ll Love This Homemade Butternut Squash Soup

  • Rich, creamy texture without any dairy
  • Naturally vegan and packed with vegetables
  • Easy one-pot recipe
  • Perfect for meal prep and freezing
  • Full of cozy autumn flavors
  • Ready with simple pantry ingredients

Ingredients You’ll Need

This healthy Homemade Butternut Squash Soup is made with simple, nourishing ingredients that let the natural sweetness of the squash shine.

You’ll need:

  • Butternut squash (I happily buy mine peeled and cubed to save time!)
  • Onion
  • Celery
  • Carrots
  • Garlic
  • One crisp apple for natural sweetness
  • Good-quality vegetable stock
  • Fresh thyme
  • Fresh sage
  • Freshly ground black pepper
  • Kosher salt, if desired

The apple adds a subtle sweetness that complements the squash beautifully, while the herbs bring warmth and depth without overpowering the vegetables.

Equipment

One of the best things about this easy Butternut Squash Soup is how little equipment you need.

  • A sharp chef’s knife
  • A large stockpot with a lid
  • A high-speed blender or immersion blender

How Long Does It Last?

Stored in an airtight container, this Homemade Butternut Squash Soup will keep in the refrigerator for up to 4 days.

In fact, I think the flavors become even better after a day or two.

Can You Freeze Butternut Squash Soup?

Absolutely.

Because this soup contains no dairy or cream, it freezes beautifully. Allow it to cool completely before transferring it to freezer-safe containers.

It will keep well in the freezer for up to 3 months. Simply thaw overnight in the refrigerator and gently reheat on the stove until piping hot.

Having a few containers tucked away in the freezer feels like giving your future self a little gift.

Is Homemade Butternut Squash Soup Healthy?

Yes! This healthy Homemade Butternut Squash Soup is every bit as nourishing as it is delicious.

Butternut squash is naturally rich in:

  • Vitamin A for healthy vision and immune function
  • Vitamin C to support your immune system
  • Potassium for heart health
  • Manganese for healthy bones
  • Fiber to help keep you feeling satisfied

With no cream and very little added fat, this soup is light, comforting, and packed with colorful plant goodness.

Serve it alongside a hearty salad, a slice of crusty sourdough, or a grilled vegetable sandwich for a simple meal that celebrates the magic of seasonal cooking.

Sometimes the most nourishing meals are also the simplest. A humble squash, a handful of vegetables, fresh herbs from the garden, and a little patience are all it takes to create a bowl of pure Plant Magic.
