Deliciously “Creamy” Tahini Herby Dressing

Ingredients

  • ¼ cup tahini
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 garlic clove, crushed
  • A dash of pure maple syrup
  • ¼ teaspoon freshly ground black pepper
  • Pinch of kosher salt or Bragg Seasoning
  • ¼ cup finely chopped fresh herbs (I love parsley, basil, oregano, thyme, and mint)
  • 2 tablespoons water, or more as needed

Instructions

  • In a medium bowl, whisk together the tahini, lemon juice, lemon zest, garlic, maple syrup, pepper, salt, and fresh herbs.
  • The mixture will become very loose at first before thickening into a creamy paste. This is completely normal.
  • Gradually whisk in the water, one tablespoon at a time, until the dressing reaches your desired consistency.
  • Taste and adjust with more lemon juice, pepper, maple syrup, or water if needed.
  • Serve immediately or refrigerate until ready to enjoy.
