  • 1 tablespoon Dijon mustard
  • 1 tablespoon pure maple syrup
  • ½–1 teaspoon freshly ground black pepper
  • ½ ripe avocado
  • Zest and juice of 1 large lemon (or 2 small lemons)
  • 1 tablespoon rice wine vinegar
  • ¼ cup filtered water, plus more if needed

Notes

  • Add all of the ingredients to a high-speed blender.
  • Blend until completely smooth and creamy.
  • Taste and adjust the seasoning. Add more lemon juice for brightness, maple syrup for balance, or black pepper for a little extra kick.
