This is my new go to salsa. Full of black beans, fresh veggies, herbs and spices, it’s a fiesta in the mouth:) Being an oil free recipe it’s super low calorie and very good for you. As with most recipes that don’t contain oil the flavor can be bumped up by adding citrus, spices and fresh herbs. In this case I used the zest and juice of 2 limes, ground cumin and a pinch of harissa spice, then plenty of chopped parsley, you could however just as deliciously use cilantro, mint or oregano.

This is sensational used in burritos or as a topping on baked potatoes, rice or even atop a nice thick piece of toasted wholewheat sourdough. Alternatively give it a quick blitz in the food processor until you have a spreadable texture and use it as a dip or a spread. Play with the amount of heat you like, jack it up with extra jalapeno and harissa spice or tone it down by leaving them out if you prefer.

How do I make Oil Free Black Bean Salsa?

So easy!

  1. place the beans in a bowl
  2. Add the parsley or cilantro, diced tomatoes, jalapeno if using, green pepper and garlic.
  3. Then add the corn, lime zest and juice, ground cumin, harissa spice, salt and pepper.
  4. Stir well and serve!

Black Bean Salsa – Oil Free!

A deliciously healthy oil free salsa recipe which will compliment almost any veggie dish!

  • Total Time: 10 minutes
  • Yield: 4 servings

Ingredients

1, 15 oz can of black beans, drained and rinsed

3/4 cup corn, frozen or fresh

1/2 jalapeno pepper, small dice (optional if you like heat)

1/2 green pepper, small dice

1 cup tomatoes, diced

1/2 cup fresh parsley or cilantro, chopped

Zest and juice of 2 limes

2 teaspoons ground cumin

2 cloves garlic, minced

1 teaspoon black pepper

1 teaspoon kosher salt (optional)

1/4 teaspoon Harissa spice (optional for spice!)

 

 

Instructions

  1. Place all the ingredients in a large bowl and mix well.
  2. Taste and adjust seasonings to your liking.
