Absolutely.

Simply pulse fresh cauliflower florets in a food processor until they resemble grains of rice.

But here’s my little shortcut…

I almost always keep a few bags of frozen cauliflower rice tucked away in the freezer.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 small onion, diced
  • 1 teaspoon kosher salt
  • 2 cloves garlic, minced
  • 1 (12-ounce) bag frozen cauliflower rice (or about 5 cups fresh)
  • 1 cup broccoli florets, chopped small
  • 1 large carrot, grated or finely diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 cup frozen peas
  • 1 (15-ounce) can black beans, drained and rinsed
  • 2–3 green onions, sliced
  • 2 tablespoons low-sodium tamari
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Freshly ground black pepper
  • Juice of 1 lime
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped toasted cashews

Instructions

  1. Heat the olive oil in a large sauté pan or skillet over medium heat.
  2. Add the onion and cook for 4–5 minutes until softened. Sprinkle a little salt over to prevent burning. Stir in the garlic and cook for another minute until fragrant.
  3. Add the broccoli and carrot and cook for 3–4 minutes, stirring occasionally.
  4. Stir in the cauliflower rice, tomatoes, corn, peas, black beans, tamari, cumin, smoked paprika, and a few twists of black pepper.
  5. Cook for another 5–7 minutes, stirring frequently, until the vegetables are tender and the cauliflower is heated through.
  6. Remove from the heat and stir in the lime juice, green onions, cilantro, toasted cashews, and more salt and pepper as desired.

Serve immediately with extra lime wedges, more fresh herbs, sliced avocado if desired, and an extra sprinkle of toasted cashews for crunch.

Every colorful forkful is a reminder that healthy weeknight dinners can be wonderfully simple, incredibly satisfying, and full of Plant Magic.
