A fabulous Vegan Green Goddess Dressing dressing is a wonderful addition to your culinary repertoire and let me tell you this is one fabulous dressing. It’s positively bursting with flavor and zingy happiness. How could it not be, just listen to the ingredients:
- avocado,
- garlic,
- Dijon mustard,
- lots of fresh herbs,
- maple syrup,
- kosher salt and freshly ground black pepper,
- lemon juice,
- white wine vinegar
You can absolutely make this your own by using your favorite herbs but please make sure they’re fresh. If you pick them from the garden still warm from the sun you can pretty much taste their oils in the dressing which is fantastic and deeply flavorful. I have an explosion of mint, basil and oregano in my garden so I used those but honestly go with what you love. You can’t go wrong with fresh herbs – except perhaps for rosemary which might be a little overpowering. There’s plenty of “good” fat in this recipe from the avocado.

A deliciously green vegan dressing.
Ingredients
1 cup fresh herbs loosely packed. I used basil, mint and oregano
1 tablespoon Dijon mustard
1 tablespoon maple syrup
1/2 – 1 teaspoon freshly ground black pepper
1/2 a good sized avocado
Juice and zest of a good sized lemon, if the lemon is small you may need 2
1 tablespoon rice wine vinegar
1/4 cup filtered water
Instructions
- Place all the ingredients in a high speed blender and blitz. Taste and add more pepper, lemon juice if required. If the consistency is to thick add a little more water. Taste again and tinker until you’re satisfied.
The is a fabulous fresh and tasty dressing. I stir-fried some locally grown organic kale, spinach and beet greens with mushrooms, courgette, garlic, ginger and onion, then added the finely grated beetroot (raw) before stirring the dressing through. Topped it with a sprinkling of nutritional yeast and vegan parmesan (cashews, garlic clove and a pinch of Himalayan. salt). Fantastically light and satisfying summer evening meal and a great way to use lots of herbs from the garden. Thank you, I’ll be making this many times before the end of summer.
