The reason I adore this smoothie is quite honestly the color. Just LOOK at it – it’s glorious! It’s also glorious for your body being low in calories and high in nutrients, especially magnesium and fiber. Add some other wonderful fruits like mango, blueberries and banana and you’ve got a beautifully healthy way to start the day.
People worry about fruit sugar but remember you’re eating the fiber with the plant, it’s not like a juice where all the fiber is removed. Fiber is our friend and there’s tons of it in this recipe. You could absolutely add some spinach or kale to the mix, the color won’t be quite as vibrant but it will add extra goodness.
I buy my dragon fruit in frozen packs ready to use, click here to find out where you can find some, then I usually add some vegan protein powder to add a little extra oomph. I tend to go for a vanilla flavored one such as Vega. Sprinkle over some chopped nuts, chai seeds and dried coconut and you’ve got a fabulous concoction.
Just pile everything into a high speed blender and blitz until smooth and creamy. Any plant milk will work, I used a combination of almond and coconut and it was delish. I recommend adding a teaspoon or two of ground flaxseeds to the mix. Flaxseeds are natures superfoods, cleaning out the system and protecting you from a host of awful diseases. If you don’t believe that these tiny little seeds pack such a punch check out the scientific research from Dr Michael Greger here.
