These no cook energy balls are amazing!
These little beauties are my new favorite snack. Energy balls seem to be all the rage these days but many recipes contain a ton of fat from coconut oil. I wanted to make them lower in fat but with the addition of flax seeds, whose health benefits are extraordinary. These tiny little seeds are a magic elixir for just about anything that ails you. Studies show just a tablespoon or two a day helps bring down blood pressure and high cholesterol, they’re a rich source of lignans which may reduce cancer risks and are a great source of fiber and omega 3’s .
I love making these Energy Bites as they take 5 minutes to whip up from ingredients you probably already have in your pantry. They’re the perfect make ahead recipe so you have a little morsel of delicious goodness at hand.
What’s in them?
- Medjool Dates
- Chai seeds
- Hemp seeds
- your favorite nuts
- cocoa powder
- dried fruit
They’ve got all the pow of a sugar laden cookie without all the refined whack I’m trying to avoid. Try them, you’ll be amazed. Make sure you invest in good quality Medjool Dates to achieve that lovely fudgy quality, then put them out of sight as they’re irresistible (I ate four at one sitting).
How do I make these Energy Balls?
Easy.
- Soften the Medjool dates if necessary.
- Place the dates and nuts in the food processor and blitz.
- Add all the other ingredients and blitz a little more.
- Rolls into balls.
- Chill.
- Drizzle over some melted chocolate if desired.
Energy Balls
A delightful vegan treat.
Ingredients
1 cup medjool dates (pitted)
1 cup of your favorite nut, cashews, walnuts, almonds etc or a combination totaling 1 cup
2 tablespoons dark coca powder
1 tablespoon hemp seeds
2 tablespoons ground flax seed
1/4 cup dried cranberries
1/4 cup golden raisins
1/4 cup pumpkin seeds
1/4 cup dark chocolate chips
1 tablespoon hemp seeds
1 teaspoon vanilla extract
1 teaspoon non dairy milk
Instructions
If the medjool dates are hard, place them in a heat proof bowl and pour boiling water over them. Leave for 10 minutes or until softened. Drain and proceed with the recipe.
Place the pitted dates and nuts of choice in a food processor. Run the processor until the nuts and dates have crumbled and look like breadcrumbs.
Add all the other ingredients and blend very well until the mixture comes together to a sticky dough.
Scoop heaping teaspoons of the mixture and roll into little balls. Place on a parchment lined plate and store in the fridge.
