The Magic Behind the Ingredients

Fresh Lemons

Fresh lemon juice gives the pudding its vibrant citrus flavor, while gently infusing strips of lemon peel into the milk creates an even deeper lemon aroma without any bitterness or texture.

Plant Milk

Oat milk creates a beautifully creamy pudding, while canned light coconut milk makes it even richer. Either works wonderfully.

Maple Syrup

Natural sweetness allows the bright lemon flavor to shine without becoming overly sweet.

Vanilla

A splash of pure vanilla softens the citrus and rounds out every bite.

Cornstarch

Cornstarch transforms the simple ingredients into an incredibly silky pudding. Using just a little less creates an even softer, more luxurious texture.

The Secret to Perfect Vegan Lemon Pudding

The key is gentle cooking.

Whisk continuously over medium heat until the pudding slowly thickens. Avoid turning the heat too high, as the pudding can thicken unevenly.

If you notice a few small lumps, pour the finished pudding through a fine mesh sieve before transferring it to serving glasses.

To keep the surface perfectly smooth, press reusable wrap or parchment directly onto the pudding while it cools before refrigerating.

Make Ahead

This pudding is even better after a few hours in the refrigerator.

Allow it to chill for at least three hours, although overnight gives the flavors time to develop beautifully.

Store covered in the refrigerator for up to three days.

Freezing isn’t recommended, as the texture changes once thawed.

Plant Magic Serving Ideas

Although this pudding is delicious served simply, I love adding little botanical touches depending on the season.

Try garnishing with:

  • Finely grated lemon zest
  • Fresh raspberries or blueberries
  • Lemon balm leaves
  • Tiny sprigs of fresh mint
  • Edible violas or pansies
  • Chamomile flowers
  • A light sprinkle of crushed pistachios
  • Toasted coconut flakes

These simple garnishes transform an everyday dessert into something truly enchanting.

Plant Magic Tip

Before juicing your lemons, roll them firmly on the countertop using the palm of your hand. This helps release even more juice, making every lemon go a little further.

A bright, delicious, easy lemony dessert.

  • Total Time:
    35 minutes

  • Yield:
    2 servings

Ingredients

  • 2 cups unsweetened oat milk (or light canned coconut milk)
  • 3 wide strips lemon peel (removed with a vegetable peeler)
  • ¼ cup freshly squeezed lemon juice
  • ⅓ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 2½ tablespoons cornstarch

Optional Plant Magic Garnishes

  • Fresh raspberries
  • Blueberries
  • Lemon balm leaves
  • Fresh mint
  • Edible violas or pansies
  • Chamomile flowers
  • Crushed pistachios
  • Toasted coconut
  • A little freshly grated lemon zest

Instructions

  1. Pour the milk into a saucepan and add the strips of lemon peel. Warm gently over medium-low heat until steaming, but do not boil. Remove from the heat and allow the lemon peel to infuse for 10–15 minutes.
  2. Remove and discard the lemon peel.
  3. Whisk together the cornstarch with a few tablespoons of the infused milk until completely smooth.
  4. Add the remaining infused milk, maple syrup, vanilla, lemon juice, and the cornstarch mixture back to the saucepan.
  5. Cook over medium heat, whisking constantly, until the pudding thickens and becomes glossy, about 5–8 minutes.
  6. If you’d like an ultra-silky finish, pour the pudding through a fine mesh sieve.
  7. Divide between serving glasses or ramekins.
  8. Place a reusable wrap or parchment directly onto the surface of each pudding to prevent a skin from forming.
  9. Refrigerate for at least 3 hours or overnight.
  10. Just before serving, garnish with your favorite Plant Magic toppings.
